Here's how it works:
1. Yeast “eats” the sugar →
The yeast in the SCOBY starts the fermentation by breaking down sugar. This produces carbonic acid, a small amount of alcohol, and nutrients – which gives kombucha its typical fizziness and invigorating effect.
2. Bacteria convert the alcohol →
The good bacteria then convert the alcohol produced, as well as residual sugars, into valuable acids and enzymes. This process creates more depth of flavor and makes kombucha so special.
3. The result?
